CREAM OF POTATO SOUP WITH DUMPLINGS, CREAMY RANCH POTATOES, O’BRIEN POTATO CASSEROLE RECIPES!!!

A friend ask me about a Cream Of Potato Soup with Dumplings, so I got out some of my church cookbooks and found this...Decided to post some fast and easy potato recipes from the cookbooks also....Enjoy.

CREAM OF POTATO SOUP WITH DUMPLINGS

INGREDIENTS:
4 large Potatoes, any variety
2-3 Carrots, scrubbed & chopped
1 cup Chicken Stock
4 tablespoons butter
1 medium Onion, chopped fine
8 cups Milk
2 cups Heavy or Light Cream
1 tablespoons Salt
Pinch of Rosemary, Sage & Marjoram
1 teaspoon Garlic Salt

DIRECTIONS:
Scrub potatoes well and knick out eyes and dark spots. Do not peel. Dice into cubes and place with carrots and 1 cup soup stock in heavy 3 quart saucepan. Cover and cook at medium heat for about 5-7 minutes. Reduce heat to low and cook covered until potatoes are tender but not mushy, about 20-30 minutes.
Melt butter in Dutch oven until it sizzles. Sauté onions in butter until tender. Add milk, cream and seasonings. Cook mixture over medium heat until very hot. Do not boil. Add potato mixture to hot milk. Cover and simmer on low heat for 30 minutes to an hour. Before serving, add dumplings & garnish individual portions with chopped parsley and a pat of butter

The Dumplings:

Combine the flour, baking soda and 1/2 teaspoon salt; cut in the shortening with a pastry blender or two knives until mixture is consistency of coarse meal. Add the buttermilk, stirring just until dry ingredients are moistened. Turn dough out onto a floured surface and knead 4 or 5 times -- no more.

For drop dumplings, pat the dough down to a 1/4-inch thickness, and pinch off 1-1/2-inch pieces.

For rolled dumplings, roll the dough to a 1/4-inch thickness, and cut into 3" x 1" strips.

Drop dumplings, one or two at a time, into the boiling broth (4 C Water & 2 C Chicken broth) then reduce heat to medium-low. Stir from time to time to make sure dumplings do not stick together. Cook dumplings 8 to 10 minutes then add to Creamy Potato Soup Mixture… Makes 4 to 6 servings.

Notes: Dumpling dough is very similar to biscuit dough and, like biscuit dough, the less it is handled, the lighter and more tender the result.

FOR THOSE OF YOU WHO HAVE PETS, THIS IS A TRUE STORY.

FOR THOSE OF YOU WHO HAVE PETS, THIS IS A TRUE STORY. FOR THOSE THAT DON'T, IT IS A TRUE STORY.

The following was found posted very low on a refrigerator door.

Dear Dogs and Cats: The dishes with the paw prints are yours and contain your food. The other dishes are mine and contain my food. Placing a paw print in the middle of my plate and food does not stake a claim for it becoming your food and dish, nor do I find that aesthetically pleasing in the slightest.

The stairway was not designed by NASCAR and is not a racetrack. Racing me to the bottom is not the object. Tripping me doesn't help because I fall faster than you can run.

I cannot buy anything bigger than a king sized bed. I am very sorry about this. Do not think I will continue sleeping on the couch to ensure your comfort, however.. Dogs and cats can actually curl up in a ball when they sleep. It is not necessary to sleep perpendicular to each other, stretched out to the fullest extent possible. I also know that sticking tails straight out and having tongues hanging out on the other end to maximize space is nothing but sarcasm.

For the last time, there is no secret exit from the bathroom! If, by some miracle, I beat you there and manage to get the door shut, it is not necessary to claw, whine, meow, try to turn the knob or get your paw under the edge in an attempt to open the door. I must exit through the same door I entered. Also, I have been using the bathroom for years - canine/feline attendance is not required.

The proper order for kissing is: Kiss me first, then go smell the other dog or cat's butt. I cannot stress this enough.

Finally, in fairness, dear pets, I have posted the following message on the front door:

TO ALL NON-PET OWNERS WHO VISIT AND LIKE TO COMPLAIN ABOUT OUR PETS:

(1) They live here. You don't.
(2) If you don't want their hair on your clothes, stay off the furniture. That's why they call it 'fur'-niture..
(3) I like my pets a lot better than I like most people.
(4) To you, they are animals. To me, they are adopted sons/daughters who are short, hairy, walk on all fours and don't speak clearly.

Remember, dogs and cats are better than kids because they:
(1) eat less,
(2) don't ask for money all the time,
(3) are easier to train,
(4) normally come when called,
(5) never ask to drive the car,
(6) don't smoke or drink,
(7) don't want to wear your clothes,
(8) don't have to buy the latest fashions,
(9) don't need a gazillion dollars for college and
(10) if they get pregnant, you can sell their children ...

1/4 cups extra-virgin olive oil
2 cups chopped onion (1 large)
4 minced garlic cloves
4 cups cooked dried Great Northern beans
(If using canned beans, make sure you rinse them well.)

3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried rosemary
1 1/2 teaspoons balsamic vinegar

Yield: 6 cups

EIGHT CAN SOUP

This is so easy and so yummy. Make some cornbread, and you have a great meal!

INGREDIENTS:
1 pound Lean Ground Beef, browned with
1 small onion
1 (10 3/4 oz) can condensed Tomato Soup, undiluted
1 (15 ounce) can minestrone soup, ready to serve
1 (15 oz) can Chili with Beans
1 (15 oz) can Chili without Beans
1 (15 oz) can Mixed Vegetables, undrained
1 (14.5 oz) can Diced Tomatoes, undrained
1 (10 oz) can Diced Tomatoes with Green Chili Peppers, undrained
1 (15 oz) can Whole Kernel Corn, undrained

DIRECTIONS:
Add all the ingredients to a 6-quart (no smaller) Crock Pot and stir until completely mixed together. DO NOT drain liquid! DO NOT add additional liquid either. Simply heat on High for about 30 to 45 minutes or until mixture starts to bubble; then turn to Low. That's it! It's ready-to-serve! However, I've found that if you allow this soup to continue cooking on Low for about 3 to 4 hours before serving, it will taste even better because the flavors will have melded together nicely.

CORN CHOWDER

INGREDIENTS:
1 tablespoon olive oil
2 tablespoons finely diced celery
2 tablespoons finely diced green onion
2 tablespoons finely diced red pepper
1 package frozen whole kernel corn (10 oz.)
1 cup peeled, diced, 1/2" raw potatoes
2 tablespoons chopped fresh parsley
1 cup water
1/4 teaspoon salt
black pepper to taste
1/4 teaspoon paprika
2 tablespoons flour
2 cups low-fat (1%) or skim milk
1/4 cup fresh parsley, minced

DIRECTIONS:
Heat oil in medium saucepan.
Add celery, onion, and green pepper and saute for 2 minutes.
Add corn, potatoes, water, salt, pepper, and paprika. Bring to a boil; reduce heat to medium; and cook, covered, about 10 minutes or until potatoes are tender.
Place 1/2 cup milk in a jar with tight fitting lid. Add flour and shake vigorously.
Add gradually to cooked vegetables and add remaining milk.
Cook, stirring constantly, until mixture comes to a boil and thickens. Serve garnished with chopped fresh parsley.

PEANUT BUTTER CUP COOKIES

Peanut Butter Cup Cookies are easy to make.

Use any peanut butter cookie recipe. Spoon small amounts (probably about 2 teaspoonfuls) into small 1 3/4″ muffin tins that have been sprayed with Pam. Don’t over fill. If the dough bakes over the top of the tin, the cookie will be difficult to remove from the muffin tin.

You can use store bought refrigerator cookie dough for this recipe, which is what I do. To get it out of the tube easily, cut the wrapping with a knife and, on each end, go all the way down to the opposite side. That makes it easy to slide the dough out of the wrapper without leaving dough stuck to the ends. There is no need to slice into the dough. Just cut through the wrapper.

Slice the dough into 12 slices and divide each slice into four pieces. If using more than one roll of dough, store the additional rolls in the refridgerator until needed. If left on the counter at room temperature, the dough gets soft quickly which makes it harder to work with.

You don’t have to roll the dough into balls or smoosh it down or anything else. Just drop it into well greased muffin tins.

Bake for 8-10 minutes at 350. Nine minutes is just right in my oven. As soon as they are removed from the oven, press a small peanut butter cup into the center.

After adding the peanut butter cups, leave the cookies in the tins to cool. The dough is soft and fragile while warm. If they are removed immediately, the cookies fall apart.

When cool, gently slide a small frosting spatula along the edge of the cups to loosen them.

At this point, you can freeze the cookies until time to serve. You can thaw them and drizzle them with melted almond bark (vanilla) and decorate with chocolate sprinkles. You could use red and/or green candy melts to drizzle over the tops and decorate with candy sprinkles. Or drizzle with melted chocolate and sprinkle with chopped peanuts…lots of ways to decorate them. Or leave them plain!

Wal-Mart sells mint cups that are similar to the peanut butter cups and you can use them with sugar cookie dough.

1/4 tsp. granulated garlic powder
1/8 tsp crushed red pepper
1/2 Cup pizza sauce (or 1/2 Cup tomato sauce mixed with 1 tsp. pizza seasoning

BLT RANCH DIP

If you grow your own tomatoes or the ones you see at the farmers market are too good to pass up, here's a recipe for using them up. It tastes so much better with garden ripe tomatoes so use them if you can. This is a perfect take-along dip to any gathering, but you may want to double it - it will go fast.

1 TB dry buttermilk ranch dressing base
1/2 tsp. freshly ground black pepper
1 TB. water
1 Cup sour cream
1/2 Cup mayonnaise
1 lb. bacon, fried and crumbled
2 Cups chopped tomatoes (about 2 large)
lettuce and crackers as desired

DIRECTIONS:
Put the dry buttermilk ranch dressing base, black pepper and the water into a bowl, stir and let stand about 5 minutes. Whisk in the sour cream and mayonnaise until well blended. Fry the bacon, let it drain, and crumble it into 1/2 inch pieces. Cut the tomatoes into wedges, seed them, and chop them into 1/4 to 1/2-inch pieces. Fold the bacon and tomatoes into the dip. Refrigerate until serving time. If you use low fat sour cream and mayo, serve within a few hours, as the dip will get watery overnight. If you use regular mayo and sour cream, it is even better the next day! Stir before serving. Serve on a bit of lettuce with your favorite crackers.
Recipe from Penzy
