TEQUILA LIME CHICKEN FAJITAS

Host a fun fiesta in your own backyard with this festive recipe.

INGREDIENTS:

6 large boneless/skinless chicken breasts

Marinade:

1/2 Cup tequila
1/2 Cup lime juice (juice of 4 limes)
1/4 Cup olive oil
1 TB. chili powder
1 TB. ground cumin
1 TB. minced garlic
1 TB. cilantro, dried or 1/4 Cup fresh, chopped
1 tsp. salt
1 tsp. ground black pepper

Fajitas:

1 TB. olive oil
2 medium green pepper, cut into thin slices
2 medium red or yellow pepper, cut into thin slices
1 large sweet onion, cut into medium-sized pieces
12 large flour tortillas

DIRECTIONS:

Combine the marinade ingredients and pour into a zip-top bag. Add the chicken breasts and marinate at least a few hours (overnight is best) in the refrigerator.

Grill the chicken breasts over medium-high heat for about 7-8 minutes per side or until done. Let rest a few minutes, and then cut into 1/2-inch strips immediately before serving.

While the chicken is grilling, heat the olive oil over medium-high heat in a skillet. Add the peppers and onion and cook for no more than 3-5 minutes so that the vegetables are still a little crisp.

Serve the chicken and vegetables on the flour tortillas with sides of rice and/or beans.

Sue, Love the things you miss. I can relate to them all. I miss making a playhouse by raking pine straw into little walls to seperate the rooms, listening to a conversation of a neighbor on the phone with a party line.. ( got in trouble for this so much as a child) visits from Santa when I was a child,all the carefree summer days when school was out, crawling into bed with my parents and playing under the sheets which made a great tent, but most of all the absence of all this for children growing up so fast in todays world. Oh what joys they are missing.

I have never added tequila to the marinade. Does it add a lot to it? Chicken fajitas are one of our favorites! We bought a basket for cooking the peppers and onions in on the grill. That makes a big difference. Have a great week!

~Playing Red Light-Green Light-Hope to See a Ghost Tonight with a gaggle of my cousins at dusk
~Feeding barn kitties warm milk
~Black Cow and Slow Poke suckers
~Teaberry Gum
~Cereal, Egg Yolk and Bacon baby food
~Picking wildflowers
~Seeing the steam in the kitchen window when I walked up the road after school - 'cuz it meant my mom was making homemade donuts
~My mom's homemade bread and hot cocoa
....that list could go on and on....Thanks for making me think...Smiles & Hugs, Robin

Love your list ! I miss chasing lightening bugs at night with my sis.I miss taking quilts and draping them over momma's clothesline to make a tent,miss making mud pies and using daddy's shaving cream for icing( got into trouble a few times for that one),but most of all I miss being able to run up and hug daddy. This was a great post Sue and the recipe looks delicious. Hugs,Jen

the old-fashioned ring of a telephone;
rural neighbors who would honk as they drove past on the gravel road;
the fragrance of alfalfa hay
the putt-putt sound of my dad's John Deere tractor
