GREEK STYLE SKILLET SUPPER, TACO CASSEROLE & CARAMEL BANANA TIRAMISU!


GREEK STYLE SKILLET SUPPER

For a taste of Greece, this one-dish complete meal is sure to be a hit. Feta cheese accents the authentic flavor.


1 pound ground beef
1/2 cup chopped onion
2 teaspoons Oregano Leaves
1 teaspoon Cinnamon, Ground
1/2 teaspoon Garlic Powder
1 can (14 1/2 ounces) reduced sodium beef broth
1 can (14 1/2 ounces) diced tomatoes, undrained
2 tablespoons tomato paste
1 1/2 cups uncooked penne pasta
1 1/2 cups frozen leaf spinach or cut green beans, thawed
3/4 cup crumbled feta cheese, divided

Cook ground beef and onion in large skillet on medium-high heat until beef is no longer pink, stirring occasionally. Drain fat. Add oregano, cinnamon and garlic powder; mix well.

Stir in broth, tomatoes and tomato paste. Bring to boil. Stir in pasta. Reduce heat to medium; cover and cook 10 minutes or until pasta is nearly tender. Stir in spinach and 1/2 cup of the feta cheese. Cover. Cook 5 minutes longer or until pasta is tender.

Sprinkle with remaining 1/4 cup feta cheese. Cover. Let stand 5 minutes.

TACO CASSEROLE

A quick and easy one-dish version of "Taco Night". All of the great flavor of tacos in one delicious dish.

1 1/2 pounds ground beef or ground turkey
1 package taco seasoning mix or use the homemade seasoning mix
1 can (16 ounces) pinto beans, drained and rinsed
1 can (15 ounces) tomato sauce
1 can (11 ounces) Mexican-style corn or whole kernel corn, drained
1 cup shredded Cheddar cheese
1 cup coarsely crushed tortilla chips
Assorted toppings, such as sour cream, sliced green onions, shredded lettuce and chopped tomatoes (optional)

Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.

Stir in Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips.

Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.

CARAMEL BANANA TIRAMISU

The classic Italian dessert with a caramel apple twist.
This is a great dessert to take to a potluck-everyone loves it!! No leftovers!!

INGREDIENTS:

1 1/3 cups Caramel Dip
1/4 cup Caramel Dip
One 3.4 oz package instant banana pudding mix
1 cup Cold milk
1/2 cup Sour cream
2 cups Whipped topping
30 CrispyLadyfinger cookies
1 cup Orange Juice
2 Large ripe bananas, peeled and sliced

TOPPING

1 1/2 cups Whipped topping
Ground cinnamon

DIRECTIONS:

Combine pudding mix and cold milk in a medium bowl and whisk to thicken. Add 1/3 cup Caramel Apple Dip and sour cream and whisk to combine. Fold in whipped topping. Dip 15 ladyfingers in orange juice and arrange one layer of soaked fingers in a 9" x 11" dish. Spread 1/2 cup Caramel Apple Dip on top of ladyfingers. Spoon half of cream mixture over caramel and spread into an even layer; top with half of banana slices. Repeat process with remaining ingredients. For topping, spread whipped topping over all, drizzle with Caramel Apple Dip and sprinkle with cinnamon.
