Eight Miles Down That Road Again & Delicious Apple Dumplings!!!


Well there was no "Tuesday Take It Off Challenge" this week....Janene took the week off....I did weigh this morning and I lost another 3 pounds last week....I am almost doing the Happy Dance...I have been drinking and drinking all my water plus other beverages and tracking my eating by what, amount and when...I also journal on when I feel hungry and why do I think I feel hungry...I also track my exercise and fluids..
Take note of the way you feel—your hunger signals and emotions—just before and after you eat. Measure & Weigh, don't guess!
Food and Points (what you consume, the portion size and points value)
Hunger Levels (When do you get physically hungry? This information is helpful for future planning)
Filling Foods (Try to eat as many filling foods as possible. These foods are healthier and keep you satisfied longer.) Remember GREEN is the way to go!!
I can say from experience that I do best when I journal my food, specifically. There is something about writing down what I consume and being accountable that keeps me on track.
There is a WW saying:
"If you bite it write it. If you snack it, track it. If you nibble it, scribble it."
Believe you me it makes a big difference....

Delicious Apple Dumplings:

Preheat oven to 350 degrees F.

Ingredients
6 apples (Granny Smith or Johnathan)
1 cup Splenda No Calorie Sweetener, Granulated
1 teaspoon ground cinnamon
1 tablespoon Smart Balance Lite
1 can Diet Mountain Dew

Directions:
Spray a Larger muffin tin with butter flavored cooking spray
Wash apples and core using an apple corer and place in the sprayed muffin tins.
Mix together Splenda Granulated Sweetener and cinnamon. Fill each apple with the mixture and then top each apple with a small dot of Smart Balance Lite and pour on a little diet Mt Dew soda, Cover with aluminum foil and bake in preheated oven 45 to 50 minutes or until slightly soft.

This is a diet friendly apple dumpling, taste good and keeps you on target for losing that weight!

Granny Smith Apple

Here is another one:


Apple Dumplings:
6 servings. Each serving equals one 5 A Day serving.

Ingredients

2 Tbsp firmly packed light brown sugar
1½ tsp cinnamon
1 tsp cornstarch
1 tsp vanilla extract
6 macintosh apples, peeled and cored
6 square egg roll wrappers

Preheat the oven to 375 degrees F. Spray six muffin cups with non-stick cooking spray. In a large bowl, combine the sugar, cinnamon, cornstarch, vanilla, and 1 Tbsp water. Add the apples; toss to coat. Place one apple in the center of each egg roll wrapper. Bring the corners up to the top of the apple, pressing and folding to seal the edges. Stand each dumpling in a muffin cup and lightly spray the tops with non-stick cooking spray. Bake until golden, about 20 minutes. Cool on a rack 15 minutes; serve warm.

Nutritional analysis per serving: Calories 165, Fat 1g, Calories from Fat 5%, Cholesterol 3mg, Carbohydrate 36g, Protein 3g, Fiber 2g, Sodium 164mg.

Ok, Sue, I'm just plain jealous! Things are at a standstill for me and I need a big old kick in the pants! (Although I don't think having a sick kid around the house for a WHOLE WEEK helped me much - I didn't hardly leave the house at all!)
