Thursday's Ham & Egg Cups~Matchbox Announcements~Cookie Recipes!!!



HAM & EGG CUPS!

These are just perfect for a Easter Brunch!
All you need is a muffin tin...ham and eggs...and a wee bit of grated cheese along with your herbs of choice. Then serve with a hash brown casserole, fruit & roll...
INGREDIENTS:
12 slices of deli ham
12 eggs
grated cheese
seasoning
chopped basil
DIRECTIONS:
Spray muffin tins with Pam.
Line each cup with a slice of deli ham (Be sure to ask them to slice it thin)
Break an egg gently into each ham cup. Season with salt and pepper...sprinkle with chopped basil (or chives or your herb of choice).
Bake at 350' F for about 15 minutes.
Remove from oven...and top each egg with grated cheese (cheddar or parmesan)...and bake for 5 minutes longer.
Remove from pan and serve immediately.

My family loves cookies, so instead of Easter Candy they get cookies...Try these they are so different and so gooooooood!

RANGER COOKIES!

INGREDIENTS:
1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups oatmeal
1 cup shredded coconut
1 cup rice krispees
DIRECTIONS:
Cream butter and sugar.
Add eggs and blend well; add vanilla.
Add flour, baking soda, baking powder and salt...mix well.
Mix in remaining ingredients...stir until well blended.
Drop by spoonfuls onto greased cookie sheet,flatten the mounds somewhat with a fork. and bake at 350° for about 10 to 12 minutes.

DOUBLE-DELIGHT PEANUT BUTTER COOKIES!

It's a twist on the classic peanut butter cookie! Crunchy outside, creamy inside, with just a hint of cinnamon. A real winner..It won in the Million Dollar Pillsbury Cook Off.

INGREDIENTS:
1/4 cup Fisher® Dry Roasted Peanuts, finely chopped
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup JIF® Creamy Peanut Butter
1/2 cup powdered sugar
1 roll (16.5 oz) Pillsbury® refrigerated peanut butter cookies, well chilled
DIRECTIONS:
Heat oven to 375°F. In small bowl, mix chopped peanuts, granulated sugar and cinnamon; set aside.
In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape mixture into 24 (1-inch) balls.
Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces; flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.
Roll each covered ball in peanut mixture; gently pat mixture completely onto balls. On ungreased large cookie sheets, place balls 2 inches apart. Spray bottom of drinking glass with CRISCO® Original No-Stick Cooking Spray; press into remaining peanut mixture. Flatten each ball to 1/2-inch thickness with bottom of glass. Sprinkle any remaining peanut mixture evenly on tops of cookies; gently press into dough.
Bake 7 to 12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Store tightly covered.

Supplies
Patterned paper
Solid colored paper
Cardstock (for the Announcement)
Ruler
Scissors or rotary blade
Decorative edged scissors (optional)
Craft glue (optional)
Plain matchbox
Double-sided tape
Diaper pin
Padded envelope (for mailing)
Steps
Cover the matchbox: Cut a piece of patterned paper to 2 1/4 in. wide by 4 1/2 in. long. Adhere one of the short edges of the paper to the bottom of the matchbox cover with double-sided tape. Be sure to align the edges of the paper with the top and bottom edges of the matchbox cover. Wrap the paper around the matchbox cover, overlap the ends, and secure them with more double-sided tape.
Embellish: To embellish your box a little bit, cut a piece of solid colored paper into a strip 1/2 in. wide by 4 1/2 in. long. Trim one long edge of the paper strip with decorative scissors, and layer it over the base paper on the bottom of the matchbox cover. Use craft glue, to adhere small buttons or other embellishments.
Create announcement cards: To create the announcement card for the interior of the matchbox, use a small font size (approximately 10 points) to print the baby’s birth information onto the cardstock. Repeat the information approximately 12 times on each 8-1/2 by 11 inch sheet of paper. Cut the sheet into cards, each measuring 2-1/8 inches long by 1-1/8 inch wide, with the text centered in each card. Secure the card to the bottom of the matchbox with a small strip of double-sided tape. Enclose a diaper pin in the matchbox as a finishing touch.
Mail: Finally, enclose the announcement in a padded envelope to mail it to your friends and family

The matchbox announcements are adorable!! Yummy...Ham and eggs..I am sure there will be left over ham after Sunday so I think I will make then for breakfast one morning....or maybe dinner.
